I made these muffins a while ago already, when I suddently felt the urge to give my basic muffin recipe an update because I wasn’t entirely happy with it. Given the fact that I still had some nectarines leftover, the choice for this muffin flavour combo was easily made. Add a little bit of lemon zest and some cinnamon for a deeper flavour, and you’ve got yourself a nice and fresh fruit-based muffin, perfect for summer.
As for the changes I made to the recipe: I added milk to the recipe, which is very common in muffin recipes anyway, but I decided to leave it out of mine way back when because I never had milk in my fridge (solid reason, I’d say). It does give your muffins this extra bit of moisture and a more silky texture, which sounds like something every muffin needs, right?
It’s been a bit silent on here for the last month. In fact, this is my first post all month, and it’s the first of July tomorrow. Oops. At the start of the year I told you guys I was going to take it easy with all of my hobbies and just do things when I felt like doing them, and that’s exactly what has happened this month. I was quite busy and stressed what with a holiday and an upcoming move, so there just wasn’t any room in my head for blogging. The holiday has come and gone now, but we’re moving in August, so we’ll see how much I get around to blogging until then! Always a surprise…
For now, let’s get to the recipe, shall we? These muffins are very easy to make and they’re the perfect sweet snack on a nice summer day!
A few weeks ago, my three month summer vacation started and since then I’ve been doing very little of anything. I caught up on some TV shows and hung out with my friends, but I haven’t really done many of the things I planned on doing this summer. Three months is long, and I just figure “ah, I can do that later”, but it’s turning into a bit of a thing in my mind. I’m starting to resent the doing nothing, which has somehow led to doing even less. I haven’t posted a blogpost in over a week, for instance. What’s that about?
I know, I know, first world problems. You’re all probably resenting me for complaining about a three month vacation, and to be fair, you should. This post is pretty whiny so far.
So let’s change that!
Instead of whining, I’m going to make a list of things I want to do in these coming two months so that I can refer back to it and actually start doing things instead of thinking about doing things and watching YouTube videos in the meantime. Time to get off my ass and start being productive (while also having fun), yay!
Summer is coming, which means I’ve got my freezer stocked up on popsicles 24/7. I’ve been wanting to make my own popsicles for ages now, and last week, on one of the handful of hot days we’ve had so far, I figured I’d give it a try.
I had some strawberries left that really needed to be used, and some mango and orange juice that was on sale at the supermarket. Add some bananas to that, and you’ve got yourself a lovely smoothie. However, freeze it for a couple of hours in some cute popsicle molds, and you end up with some delicious popsicles. So simple, and they’re healthy too, since it’s basically just frozen fruit!
This experiment was a success, and I’m definitely going to play with some more flavours throughout the summer. For now, I hope you’ll enjoy these as much as I did.
I just got home from my grandparents, where we had a lovely barbecue with some family. Now I’m just in time to post week 10 of my happy days challenge! This week had some very hot days, so I didn’t do all that much, except hang out with friends and trying to stay cool (which wasn’t an easy feat — quite impossible, actually).

Day 68: It’s so hot in hur! At least there’s ice cream to keep me happy!
Day 69: BBQ with the family! Very happy moment!
On Tuesday I will be going on a small holiday to Barcelona with my mother, so that will hopefully make for some interesting happy days pictures!
