In my opinion, very few things can top a good apple pie. It’s a classic for a reason! I don’t really bake it all that often, though, because when I’m craving apple pie, I don’t want to have to make a dough, then wait for it to rest, then roll it out, then create a lattice to go on top, and then wait for about an hour while it bakes. It just takes too much time.
Luckily, I’ve now found myself an easy alternative! This apple oatmeal sheet pan pie is very quick and easy to make and it requires only a couple of ingredients – most of which I usually have lying around anyway. It’s a lighter snack as well, because it isn’t as dense as an apple pie, which I think is a plus.
The pecans on top add some extra texture and make the flavour just that little more interesting, but you could easily leave them out altogether, or substitute them with something else. This is also a very easy recipe to make for bigger parties; just double (or triple, or quadruple…) the ingredients and you’ll be fine! You might have to bake it for a little while longer, though.
Anyway, onto the recipe!
- 140 g self-raising flour
- 65 g rolled oats
- 90 g dark brown sugar
- a pinch of salt
- 110 g butter, melted
- 3 apples, cut into small pieces
- 1 tablespoon sugar
- 2 teaspoons ground cinnamon
- 3 teaspoons lemon juice
- 40 g pecans, roughly chopped
- a baking tin (no bigger than 20 x 24 cm)
- parchment paper
- and an oven, of course! This sheet pan pie needs to be baked at 180 °C (don’t forget to preheat your oven!)
So, let’s get baking!
1. Mix together the dough Take a bowl and mix together the self-raising flour, rolled oats, dark brown sugar and the pinch of salt using a spoon. Melt the butter in the microwave (or on the stove) and add this to the mixture. Stir it through until it’s evenly mixed. This isn’t the type of dough you’ll need to roll out, so it’ll be more of a crumbly, lumpy dough.
2. Prepare the filling Peel and core the apples and cut them into small pieces or slices, whichever you prefer. Then, add the sugar, cinnamon and lemon juice and mix it all together.
3. Prepare baking tin Grease the baking tin and then line it with parchment paper. Now, take 2/3 of the dough and press it into the bottom of the tin, until the bottom is entirely covered. Then, add the apple mixture and spread it out evenly. Sprinkle the remaining dough over the apple layer, like a crumble topping. It won’t be entirely covered, but that’s fine.
4. Bake! Put the tin into your preheated oven and bake the pie for 15 minutes. Now, take out the tin and divide the roughly chopped pecans over the pie. Place the tin back into the oven and bake it for another 20 minutes. By adding the pecans at a later stage, you make sure they won’t burn in the oven. When the 35 minutes are up, take the tin out of the oven and let the pie cool down for a while before carefully lifting it out of the tin and onto a cooling rack.
And that’s it! You’ve got your own apple oatmeal sheet pan pie! You can serve it warm with some ice cream or whipped cream, or cold with a cup of tea or coffee. Either way, it’ll taste delicious – enjoy!
